There's Cauliflower In The Crust!

Home-made pizza for dinner happens in my house quite often. But as the Low-Carb Girl in the house, I make mine with a CAULIFLOWER PIZZA CRUST!!!! It is DELICIOUS!! (Who thinks of this stuff?!?)

HOME MADE PIZZA DOUGH

2 cups all-purpose flour (plus about a cup set aside)

1 pkg dry active yeast

1/2 tsp salt

1 tbs extra virgin olive oil

1 tbs honey

1 cup warm water

Combine first three ingredients with whisk or fork (see notes). Add next two ingredients, and then add water (see notes). Stir until just combined (see notes). Cover lightly with wet paper towel and let sit for ten minutes. Lightly spray pizza pan with cooking spray or sprinkle with a little bit of extra flour. Add extra flour to the dough so that it doesn’t stick to your hand and layout onto the pizza pan and pat out to desired shape and size. Continue to sprinkle with flour as you pat it out so that it doesn’t stick to your hand. Add favorite toppings and bake for around 20-25 minutes or until it has reached your desired done-ness.

NOTES: I always add other seasonings to the crust. It can be anything you like from garlic powder to Italian seasoning, or even cayenne! The water temperature cannot be too hot or it will kill the yeast or too cold or it won’t activate the yeast. I always wet my first two fingers to stir the dough until just combined so as to avoid a doughy mess.

CAULIFLOWER CRUST

1 head of cauliflower

1 egg, beaten

1/2 container (3.5 oz) goat cheese

sea salt

pepper

garlic powder

dried oregano

pinch of cayenne pepper (optional)

Pulse the cauliflower in a food processor until it turns into a rice-like texture. Place in a microwave-safe bowl and cook, dry, for four minutes. Fluff with a fork and let cool for five minutes. Cook back in the microwave for four more minutes and fluff and let cool. Add the egg, cheese, and spices to your taste. Mix together thoroughly. Line a baking sheet with parchment paper (see notes) and then press the dough onto the baking sheet into the shape you’d like. Try to keep the dough about 1/3-to-1/4-inch thick, and a little thicker around the edges if you’d like a traditional crust shape, or a little thicker if you want it to be more flat-bread like. Bake the crust for about 35 to 40 minutes, or until the crust is firm and golden-brown. Remove from the oven and add sauce, cheese, and your toppings of choice before returning the pizza back to the oven for about 5 to 10 minutes (cook until the cheese is bubbly). Let the pizza rest for a few minutes, then cut into slices and serve.

NOTES: The parchment paper is a MUST. I use all-organic ingredients, including the seasoning, but this is not a necessary thing in order for this to work and taste DELICIOUS!!
