FOR FRITTATA'S SAKE!

Ohhhhh, YES. Autumn harvest frittatta with veggie ‘sausage’ patties brushed with ever-the-slightest bit of maple syrup. Everything was BURSTING with flavor!!
Can a frittatta be sexy?? Try this one and you’ll see that it absolutely CAN!!
AUTUMN HARVEST FRITTATA
cooking spray
1 small beet, washed, peeled, sliced thin
3 small turnips, washed, peeled, sliced thin
1 medium zucchini, sliced thin
1 medium squash, sliced thin
2 carrots, sliced thin
sea salt
pepper
garlic powder
cumin
cinnamon
nutmeg
red pepper flakes
extra virgin olive oil (evoo)
10 eggs
half and half
shredded mozzarella cheese
Spray baking pan with cooking spray (see notes). Place all your vegetables in the pan, and sprinkle generously with evoo. Sprinkle remaining spices over the top of the vegetables generously, and then mix with your hands until all the veggies are coated in oil and spices. Turn on your broiler to high and put vegetables under the broiler until they turn a beautiful brown. Meanwhile, crack your eggs into a bowl, add about 1/2 cup half and half, sprinkle a tiny bit of sea salt and pepper, and whisk for one full minute. Take out the baking pan and let cool. Once cool, stir egg mixture into baking pan, and add a nice-sized handful of mozzarella cheese. Stir through with a fork. Change oven to bake at 350 degrees, and bake for about 12 minutes, or until just set. Let sit for 2 minutes, then EAT IT UP!!
NOTES: I use organic evoo cooking spray from my local grocery store. To eat clean, all my ingredients are organic, including my spices, and in this particular recipe, it does lend itself to a better taste as well. Wait until you smell your house while this is cooking……it is unbelievable. I pan-fried some vegetable ‘sausage’ in evoo, brushed it very lightly with organic maple syrup, and served alongside. This would be good for a Meatless Monday, a low-carb meal, a brunch, or like us – for dinner!!
