MEXICAN BELL PEPPERpumpkins

This dinner is so delicious it’s SCARY!! Mexican stuffed bell peppers with chicken, black beans, tomatoes, chilis, and lots of cheddar cheese!! Spine-chillingly YUMMY! (and low-carb!) (I love Rocktober!!)
MEXICAN STUFFED BELL PEPPERS
6 orange bell peppers, tops cut off and de-seeded
6 chicken breasts
extra virgin olive oil (evoo)
sea salt
pepper
cumin
chili powder
paprika
garlic powder
white wine
1 can black beans, drained, not rinsed
1 small can chilis
1 tomato, de-seeded and chopped
1 cup shredded cheese
cooking spray
In a heavy pot (see notes), pour enough evoo to cover bottom. Heat on medium heat, add chicken breasts. Sprinkle liberally with sea salt, pepper, cumin, chili powder, paprika, and garlic powder and toss together while in heated oil. Let brown, and turn from time to time. Once brown, pour enough white wine to cover bottom of pot and get all those awesome brown bits from the bottom, scraping with a wooden spoon. Cover and let simmer for fifteen minutes. Take your wooden spoon and break up the chicken breasts to look almost “pulled”. Pour in beans, tomato, and chilis, stir, and turn heat off. Let sit for five minutes. Add cheese, stir. Heat oven to 475. Spray oven sheet with cooking spray (see notes) and scoop chicken mixture into bell peppers just to the top. Put covers back on and spray liberally with cooking spray. Cook in oven about 15 minutes, or until peppers start to brown and blister. Remove from oven and let sit for five minutes. (for Rocktober, see notes)
NOTES: I use my cast iron Dutch oven to cook the chicken, but any heavy pot will do. I use organic evoo cooking spray from my local grocery store, but any cooking spray will work for this recipe. After the peppers come out of the oven and sit for five minutes, if you want to celebrate Rocktober, take a paring knife and cut any jack-o’lantern shapes into the peppers. I used the cut-out mouth to make the tongue in the above picture. Carry on with eating!! This is great low-carb, but if you want, you can add some rice on the side. It certainly wasn’t necessary for extreme flavor and fall-worthy food!
