CHRISTMAS CREAMED KALE

In my house, creamed kale is a traditional side we eat, that goes along with the ham or goose, Jerusalem artichokes, and home-made au gratin potatoes. It is beyond delicious and takes like a present all by itself!
2 pounds kale, stalks removed
4 tbs butter
1 cup heavy cream
1/2 tsp ground nutmeg
1/2 tsp cumin
sea salt
pepper
toasted pine nuts, for garnish
Cut kale coarsely, and blanch in salted water until just tender, rinse in ice water, and drain. In a large pan over medium heat, melt the butter and add the kale, cream, nutmeg, and cumin. Reduce the heat to low and cook for about five more minutes, or until the cream has reduced and thickened. Season with sea salt and pepper to taste. Sprinkle with a few toasted pine nuts, if desired.
