I Sees Ya, Cesar!

ooooooooo….now THIS is how you do home-made chicken Cesar salad. ‪It’s hearty and covered in goopy, yummy home-made Cesar dressing and Parmesan shavings.  It was a delicious and quickie dinner!! (Not to mention low-carb!)

CHICKEN CESAR SALAD

2 pkgs chicken tenderloins

sea salt

pepper

garlic powder

cumin powder

extra virgin olive oil (evoo)

white wine

2 heads Romaine lettuce, chopped rough

‬1 cup mayonnaise

1/4 cup grated Parmesan cheese

juice of 1/2 lemon

1 tbs Dijon mustard

1 tbs Worcestershire sauce

3 cloves garlic

1 tsp anchovy paste

sea salt

pepper

milk

Parmesan shavings

In heavy pot, heat enough evoo to cover bottom.  Season chicken on both sides with sea salt, pepper, garlic powder, and cumin.  Brown on both sides, remove from heat, and pour enough white wine into pot to deglaze and be soaked up by the chicken. Let cool.

In a large salad bowl, put your chopped Romaine lettuce.  In a blender or food processor, put the remaining ingredients up to milk and blend well.  If too thick, add a little milk to thin it out to your desired consistency.  Cut your chicken tenderloins into chunks, add to lettuce along with your dressing.  Mix well and sprinkle with Parmesan shavings.

NOTES:  All my ingredients are organic, minus the Parmesan, which comes from grass-fed, no hormones or antibiotic cows.  This is not necessary for the flavor of this dish, but I do find good, quality Parmesan WILL make a difference.
