This is a great spring or summer side because it is refreshing, and packed with protein and flavor!  But be careful!  You know what they say…beans, beans, the musical fruit, the more you eat – the more you……

BEAN SALAD

1 can tri-colored beans

1 can garbanzo beans (chick peas)

1 can white beans

1 pkg fresh green beans

sea salt

pepper

fresh thyme sprigs

1 cup balsamic vinegar

1/2 cup extra virgin olive oil (evoo)

Open canned beans and strain.  Empty into a medium-sized bowl.  Clean green beans and cut coarsely.  Place in salted boiling water for one minute.  Turn off heat and let sit two minutes.  Strain green beans and rinse with cold water to stop cooking process.  Add to bowl of beans.  Sprinkle with sea salt and pepper, and three sprigs fresh thyme.  Add balsamic vinegar and evoo.  Mix well and serve.  Also good chilled!
