Roasted Carrots with Tarragon & Almonds

Looking for a delicious-but-healthy holiday side dish?  These WILL NOT let you down!

1 pnd bag carrots, washed, dried, and cut into large pieces (or just use baby carrots)

4 sprigs tarragon, coarsely chopped

1/2 bag sea salt & cracked black pepper sliced almonds

extra virgin olive oil (evoo)

sea salt

pepper

Preheat oven to 375 degrees.  Mix first three ingredients on prepared baking sheet.  Sprinkle with evoo. sea salt and pepper.  Mix well with your hands.  Bake for 30 minutes.
