Lickin' Yer Chops

Special treat for autumn: Seasoned chops over fig risotto with baked apples. WOO!

SEASONED CHOPS

8 boneless pork chops

cooking spray

sea salt

pepper

garlic powder

paprika

cumin

Sprinkle chops on both sides with seasoning to your taste.  Spray a baking sheet with cooking spray (see notes).  Lay chops on baking sheet, spray tops of chops (ha! that rhymes!) with cooking spray.  Bake at 350 degrees for about 12 minutes.  Let rest for 5 minutes more.

NOTES: I use organic extra virgin olive oil cooking spray from my local grocery store, but any cooking spray will work.  All my ingredients – including and especially the pork chops – are organic, and hormone-and-antibiotic-free.  That makes for some rich flavor in the meat in this particular recipe.

FIG RISOTTO

extra virgin olive oil (evoo)

3 cups arborio rice

8 cups vegetable broth

1/2 jar Dalmation fig spread

sea salt, white pepper

In large pan, sprinkle evoo over the bottom and pour rice in, over medium heat.  Saute until light brown, about two minutes.  Add the vegetable broth, two cups at a time, until absorbed each time.  The last two cups should yield a thick, soup-like consistency.  Add fig spread at the end, cooking until melted in.  Sprinkle rice with sea salt and white pepper. Stir, and ENJOY!

BAKED APPLES

4 green apples, washed, cored, and sliced

extra virgin olive oil (evoo)

sea salt

pepper

cinnamon

nutmeg

Place apples on baking sheet.  Sprinkle with evoo and spices.  Mix real well with your hands.  Bake at 350 degrees for 12 minutes.
