Moo Shu NOT Pork

When you have to run from work to Legacy Fitness Boot Camp evening class, sometimes you rely on your crockpot to make sure dinner is on the table! (crockpot for my crackpots!) Slow-Cooker Moo Shu Not-Pork (I used turkey tenderloin!), and Asian green beans. It was so delicious I almost did a dance! (But I am WAY too sore)

SLOW COOKER MOO SHU NOT PORK

1 cup hoisin sauce

8 large cloves garlic, minced

4 tbs sesame oil

4 tbs soy sauce

2 cup shredded cabbage

2 cup shredded carrots

2 pkgs turkey tenderloin

chopped green onion

cilantro, chopped coarsely

toasted sesame seeds

Stir together hoisin, garlic, sesame oil, soy sauce; set aside. Place cabbage and carrots into crockpot. Cut the tenderloin into medium-sized chunks and sprinkle on top of cabbage mixture in crockpot. Drizzle with 1/4 cup of hoisin sauce mixture. Cover and cook on low 8 hours. Remove cover; stir in remaining 1/2 cup hoisin sauce mixture.

Serve on top of tortillas, and garnish with green onion, cilantro, and sesame seeds.

NOTES: I use all organic ingredients, including the sesame seeds, which I buy already toasted.

ASIAN-STYLE GREEN BEANS

1 pkg fresh green beans

extra virgin olive oil (evoo)

1 cup soy sauce

black pepper

1 small onion, sliced

Saute onion and green beans in heavy pan sprinkled with evoo on medium high heat. When they start to brown, stir and let sit until they start to brown on all sides. Hit the pan with the soy sauce and turn off heat. Let stir all brown bits from pan and let sit five minutes.

NOTES: I buy an organic package of green beans from my local grocery store. If you can’t find them like that, the measurement is approximately 1 1/2 pounds.
